Week eleven share

Witnessed quite an amazing thing last night......Tera and I were on our way out to the garden for the evening chores and we noticed hundreds of barn swallows swooping above the gardens. As we walked closer we saw thousands of large dragonflies. At first thought we figured the swallows were feasting on the dragonflies, but turns out both them were feasting on even smaller insects. It was a spectacle like no other.

  • Eggplant (Ping Tung & Fairy Tale, we like these small eggplants the best. eggplants like the smoky flavor imparted by the grill.)
  • Carrots (Scarlet Nantes, nothing quite like a fresh carrot, sky's the limit with carrots, raw, roasted, juiced, shredded in breads)
  • Cucumber (Tendergreen & Strait Eight....sliced up with radish and tossed with lemon juice & oil and a little cilantro or parsley is the perfect side dish)
  • Zucchini (Cube of Butter & Giambo & toss with mint and garlic for a nice side, shred it for breads, & eat raw in salads.)
  • Pole Beans (Rattlesnake variety.......we did a saute with pancetta, onion, garlic, beans and tomato....fresh herbs and a splash of apple cider vinegar was all we used to finish this simple side.
  • Herbs (Parsley, Basil, Mint)
  • Easter Egg Radish ( slice up with your cukes, and make a oil/lemon juice vinaigrette, toss in some spicy chile for heat)
  • Mixed Peppers ( this round of peppers is a HOT one. We have a blend of Korean Green & Japanese Shishito peppers, & Jalapeno)
  • Tomatoes ( Everybody's favorite. Its a blend of various varieties, big and small.....make a simple tomato salad: chunk tomatoes, add garlic, loads of basil, capers (a must!), spicy chile, and toss with balsamic vinegar & olive oil & salt/pepper.....we eat ours with some grilled bread and fresh Mozzarella cheese drizzled with oil and chiles and salt and pepper.....
